I know I should share more maintenance recipes, and I do hear about them all the time from my patients...yet they never seem to make their way into these posts. Today, though, I was talking to someone who passed along a good one so I thought I'd share. This recipe, which uses low fat cheese, was suggested by my patient's sister as a pizza substitute and has become a favorite. Here it is:
Paula's Taste of Pizza
You will need:
2 low fat cheese sticks (Sargento brand works best--100 calories)
Roma tomatoes, chopped fine
Fresh basil ( and other seasonings if you like)
Small non stick skillet with lid
To make:
Melt the string cheese on high heat while leaving lid on skillet. 2 minutes.
Remove from heat and let sit an additional 2 minutes.
Cheese will form a crispy crust which can be lifted from pan. Top with chopped tomatoes and sprinkle with fresh basil or other spices.
Fold and Eat!
